If you are a fan of green tea, you have certainly heard of Sencha. It is the most popular green tea variety in Japan, where it is highly valued by everyone. They say that with this wonderfully harmonious green tea you can practically taste the fresh, warm rays of the early summer sun. But why is it so special and how is it prepared?

What is Sencha?

Sencha is a variety of sun-grown, Japanese green tea made from the tea plant Camellia sinensis. The plants are grown on steep hills or mountain slopes, as high altitude is crucial.

Sencha differs from most other green teas worldwide because it is processed according to the special Japanese way. This means that the leaves are steamed, rather than roasted or baked in an oven (as is the case with the Chinese method). This results in a better tasting green tea and a definitely green color of the infusion.

What does Sencha taste like?

Sencha green tea has a complex flavor that is refreshing overall. A good sencha, as a rule, has grassy notes and a smooth, natural sweetness. Prepared correctly, almost all bitter notes disappear. The result is a fresh, green tea that brings joy at all times, whether day or night.

Green tea is known to be sensitive, so you have to be very careful with the water temperature and the duration of the brewing, otherwise you will turn a wonderfully fine, tasty drink into a predominantly bitter-tasting cup of nothingness.

How to prepare the perfect cup of Sencha

As already mentioned, Sencha is very, very sensitive. Therefore, the right drawing time and temperature are crucial.

For our BIO Sencha green tea, we recommend using 5.5 grams of tea leaves per 350 ml of water at a scalding temperature of exactly 80 °C. Our recommended drawing time is 2.5 minutes, which is perfect for our taste, but you are welcome to experiment to find your optimal point.
